Thai chicken patties with a chilli lime and soy dressing
200g fresh skinless chicken breast
2 onions
4 cloves garlic
2 fresh chillies
4 limes
bunch coriander
fresh ginger
honey
soy sauce
breadcrumbs
salt
pepper
Blend the onions, garlic, ginger, chillies, and coriander in a food processor the place into a mixing bowl.
Remove the zest and juice from the limes.
Add half of the juice and zest to the mixing bowl keep the other half for the dressing.
Blend the chicken in a food processor then also add to the mixing bowl. Add the breadcrumbs, salt and pepper.
Mix the ingredients together well then shape into patties
in a saucepan place the soy sauce, honey and limejuice and zest.
Finely chop half a clove of garlic and a little chilli the add to the saucepan. Reduce the liquid by half.
Gently pan fry the patties then place in the oven to cook through.
Serve the patties with a little of the reduced dressing.
