Grilled lobster with smoked butter and chives

Serves 4

Ingredients
2 x 700 – 800g lobsters freshly cooked
100g unsalted or smoked Welsh butter softened
½ tsp smoked Anglesey sea salt
Juice of ½ lemon
Chives or parsley chopped finely
1 lemon cut in wedges


Method
Remove the lobster claws and split the lobsters in half. Remove the intestines and stomach sack. Crack the claws and remove the meat .

Arrange the lobsters shell side down on a baking tray. Place the claw meat on top of the head.

Beat the butter with the smoked salt and lemon juice. Spread the lobsters generously with the butter and place under a pre heated hot grill for 2-3 minutes until the butter is bubbling.

Garnish with herbs and serve with lemon wedges , green salad and crusty bread.
